Rose Milk

Rose milk is a milk base cool drink and it is a perfect
for hot summer..Amma makes Rose syrup in a big bottle
and uses it for the whole summer.
Ingredients
Sugar - 2 cups
Water - 1 cup
Citric acid - a pinch
Rose essence - 1/2 tsp
Rasberry red color - a pinch
Method
  • In a big vessel add water , sugar and citric acid.
  • When the syrup comes to boil switch off the flame .
  • Cool the syrup completely.
  • Add essence and color to this and mix well.
  • Store in a air tight bottles in the refridgerator.
  • Before serving take one glass of cold milk and add a tsp of sugar syrup and stir well.
  • Transfer to the serving glass.

Idli podi

Can't imagine a tamil home without Idli powder..
It is a hot , spicy powder and a great dish for all
kinds of idlis and Dosas..My son even wants to have
with Rotis..Every home has its own version..This is my
own...Can adjust the amount of chillies according to
the taste
Ingredients
Urad dal - 1 cup
Channa dal - 1/2 cup
Red Chillies - 10
Garlic - 1
Hing - 1 tsp
Salt to taste
Curry leaves - a bunch
Method
  • Dry roast all the ingredients separately till the aroma comes out.
  • Cool down completely and grind it to a coarse powder.
  • Mix with Gingely oil and serve with Idlis and dosas.

Venkayya ( Onion ) Vadams

Vadam means sun dried vegetables that can be
made in summer and store it for year long..Venkaya
vadam is one of them..Though the process is tedious
the result is worth the labor..Amma used to make this
every summer...
Ingredients
Small onion - 3 kg
Urad dal - 1 cup
Red chillies - 30
Garlic - 3
Salt to taste
Mustard - 1 tblsp
Jeera - 1 tblsp
Hing - 1 tsp
Turmeric powder - 1 tsp
Curry leaves - 1 bunch
Method
  • Soak urad dal with enough water.
  • Peel the skin of onions and chopped into big pieces.
  • Chop garlic and curry leaves and add this to the onion.
  • Add mustard , jeera ,turmeric to the onion.
  • Grind dal with chillies , salt and hing till butter like consistency.
  • Mix urad dal batter to the onion.
  • Take a polythene sheet or white doti .
  • Roll the vadam into bite size in the dhoti leaving some space between each.
  • Keep it under the hot sun for 2 days.Turn the vadam and let them dry for another 2 days.
  • Store it in a airtight container.
  • When needed deep fry in the oil or fry in the MW for 2 min with 1 tsp of oil.

Instant Mango Pickle

Pickles are the great accompaniment for Curd rice.
Apart from the traditional Avakkai pickle this instant mango
pickle has been in our home all the time..
Ingredients
Mango chopped into pieces - 2 cups
Salt - 1/4 cup
Chilli powder - 4 tblsp
Mustard - 1 tsp
Green chillies - chopped - 2
Garlic chopped - 2
Oil - 2 tblsp ( preferably Gingely Oil )
Methi - 1/4 tsp
Hing - a pinch
Method
  • Mix mango pieces , salt and chilli powder.
  • Keep it aside for 1/2 hr.
  • Heat oil in a wide kadai.
  • Add mustard and methi.After it splutters add chopped green chillies,garlic and hing.
  • Now add the mango pieces .
  • Stir slowly and switch off the heat after 2 min.

Serve with curd rice.

Rasam Powder

The next in the list of Preserves is Rasam Powder. The proportion vary people to people . I used to have two types of this powder, one to make plain rasam and another for Paruppu rasam. Here goes the recipe
for Paruppu rasam. Ingredients Coarinader seeds - 2 cups Toor dal - 1/2 cup Red chillies - 1 cup Cumin seeds - 1/2 cup Curry leaves - a bunch Whole pepper - 2 tblsp Mustard - 2 tsp Method
  • Dry roast each ingredient separetely in a kadai.
  • Cool down completely and grind it to a nice powder in the mixie.
  • Store in a air tight container in the fridge.

Oil less Lemon Pickle

This is the week # 2 for the Recipe Marathon.This
week I like to post the dishes that comes under
"Preserves". Indian kitchen is not complete without
this precious preserves..starting from podis to pickles.
Today I am giving my Grandma's signature Lemon
pickle without oil..She makes a whole batch in a big
Jaadi ( jar ).She uses freshly grounded salt and chillies.
Here goes the recipe .
Ingredients
Lemon - 1/4 kg
Salt - 1 cup
Chilli powder - 1/2 cup
Methi seeds - 1/2 tsp
Hing - 1/4 tsp
Method
  • Wash the lemon well and with 2 cups of water pressure cook the lemon for 1 whistle.
  • Cool the lemon completely.
  • Chop the lemons into big pieces.
  • Add salt and chilli powder to this.Mix well.
  • Dry roast the methi seeds and hing and powder it.Mix this to the pickle.
  • Keep it under the sun for 3 days.Mix well at the end of each day.
  • Store in the airtight clear jar.
  • It is better to use wooden spoon to the pickle since the metals react with pickle and make them spoil easily.
  • Always use ceramic or glass jars to make pickles.
