Vadam means sun dried vegetables that can be
made in summer and store it for year long..Venkaya
vadam is one of them..Though the process is tedious
the result is worth the labor..Amma used to make this
every summer...
Ingredients
Small onion - 3 kg
Urad dal - 1 cup
Red chillies - 30
Garlic - 3
Salt to taste
Mustard - 1 tblsp
Jeera - 1 tblsp
Hing - 1 tsp
Turmeric powder - 1 tsp
Curry leaves - 1 bunch
Method
- Soak urad dal with enough water.
- Peel the skin of onions and chopped into big pieces.
- Chop garlic and curry leaves and add this to the onion.
- Add mustard , jeera ,turmeric to the onion.
- Grind dal with chillies , salt and hing till butter like consistency.
- Mix urad dal batter to the onion.
- Take a polythene sheet or white doti .
- Roll the vadam into bite size in the dhoti leaving some space between each.
- Keep it under the hot sun for 2 days.Turn the vadam and let them dry for another 2 days.
- Store it in a airtight container.
- When needed deep fry in the oil or fry in the MW for 2 min with 1 tsp of oil.

I don't make them anymore but vadams are still my favourite! I love them with rasam and rice or bisi bele bath.
