Chinese Fried Rice

Fried Rice is a popular component of Chinese cuisine
and other forms of Asian cuisine. It is prepared with left
over cool rice fried with other left over vegetables. Sou : Wiki.
Appa doesnot like the flavor of sauces
in the rice.So Amma's fried rice is more like Indian.
Everybody has their own method of making this
authentic dish.Here goes my version.
Ingredients
Basmati Rice - 1 cup
Peas - 1/2 cup
Chopped carrot - 1/2 cup
Chopped spring onions - 1/2 cup
Chopped bell pepper - 1 cup
Soy sauce - 1 tsp
Tomato sauce - 1 tblsp
Ajinomoto - 1 pinch
Chopped garlic - 1/2 tsp
Cumin seeds - 1/2 tsp
salt to taste

How to cook rice

  • Soak rice in enough water for 30 min.
  • Cook the rice with 2 cups of water and salt.
  • When the rice is 3/4 th done switch off the flame.
  • Drain the excess water using strainer.
  • Spread the cooked rice in a big plate.
  • Cool the rice completely.
  • It is better to cook the rice a day before and store in the refrigerator.

Method

  • Heat oil in a wok or in a large skillet.
  • Add jeera and chopped garlic.
  • Now add the veggies one by one.
  • Saute well in a high flame.
  • Add soy sauce , Ajinomotto and salt.( We have already salt to rice.So use less salt).
  • Now add cooked rice and tomato sauce .
  • Saute well until everything mixed thoroughly.

Serve hot with Gobi Manchurian or by itself.

I love the way each grain of rice appears separate from the other :) But I hope you could avoid using ajinomoto because it is not considered good for health.

and the swiss jellyrolls look divine :)

Yummy Fried Rice - i prefer the home-made ones so we can control the oil and add more veggies - looks perfect.

I love fried rice, too! I also don't use MSG (ajinomoto) in cooking for the health reasons. Perfectly cooked rice! :)
