Carrot - Walnut Cake

While I was looking over for tea time snack
for my kids I went through this cake by
Ashaji.It is very simple , easy to make
and with all usual ingredients at our pantry.
Ingredients
All purpose flour - 2 cups
Chopped walnuts - 1/2cup
Raisins - 1/4 cup
Sugar - 1/2 cup
Brown sugar - 1/2 cup
Baking powder - 3 tsp
Cinnamon - 1 tsp
salt - 1 tsp
Finely shredded carrots - 2 cups
Milk - 1/2 cup
Vegetable oil - 1/3 cup
Egg - 1
Method
  • Preheat the oven to 350 C
  • Mix flour , nuts , sugars and baking powder , salt and cinnamon.
  • Now add all the other ingredients just until moist.
  • Pour in the greased loaf pan.
  • Bake for 50 -60 min.
  • Cool in the wire rack.

I did not do any glazing over the cake.The cake is so moist

and rich.

We love carrot cakes at our place too but I've always made with the cream cheese frosting. Yours looks moist and good Kamala.

I always make carrot-walnut cake. It's from Indira's blog, an eggless version using bananas. It comes out so good each and everytime.
